Pronounced "eye" with "ch" in the front, chai is a sweet exotic
relaxing mixture of black tea, honey, vanilla, spices, and milk
prepared like a latte. For over 5,000 years, the people of India
have enjoyed Chai. Infused with black tea, spices and herbs, this
milk-based drink is typically sweetened with honey or whipped cream
and served throughout the day. Chai is known for its ability to
relieve stress, enhance relaxation, settle an upset stomach and
even help with digestion. There are many different recipes for chai.
Black tea, cinnamon, cloves, herbs and ginger typically serve as
its foundation, but all chai depends on Cardamom, its most distinctive
flavour.
It is a great early morning drink to get you off to a quick start
or in the afternoon when you need something to get you through the
day but don't want that second cup of coffee. Chai produce a warming,
soothing effect, acts as a natural digestive aid and gives one a
wonderful sense of well-being.

Reading tea leaves could be a fun activity when you have a tea party
in your home. It is only intended for entertainment purposes.
Here is what you will need:
-Loose tea leaves
-A white or pastel cup with a wider brim
-A saucer
-A teaspoon
The tea should be prepared without an infuser, but rather directly
in the cup. When the tea is almost at room temperature, sip it and
concentrate on a specific wish or question. Leave a bit of liquid
at the bottom with the tea leaves. Next take the tea cup in your
left hand and swirl it around clockwise 3 times. Gently turn the
cup upside down in the saucer to drain. Turn the cup right side
up and look for the first pattern. The leaves should now be clumped
together in several different places on the cup's inside, including
the rim, sides and bottom. These clumps will form the symbols that
you will read. This will be the response to the wish or question.
You should always begin the interpretation by looking for the simplest
symbols first. Several of the leaf clumps may clearly form shapes,
letters or numbers.
Shapes:
Triangles = good karma
Squares = the need for caution
Circles = great success
Letters: refer to the names of friends or relatives
Numbers: indicate spans of time, like months or years.
Symbols:
Symbols on the rim represent things that are very important. These
are the BIG, life-changing moments.
Symbols on the sides of the cup represent things that are significant,
but not life changing.
Symbols on the bottom indicate things that are subject to change.
Symbols that lie in straight lines indicate a definite occurrence.
Curved or wavy lines indicate the possibility of change.
Crystal clear symbols are events that are more likely to occur
Here are some pictures to look for:
Anchor- a voyage
Arrow - Bad news!
Bird - good news or travel by air
Cat - good luck
Circle - trust and love
Crescent moon - changes
Egg - increase
Knife - arguments
Dog - good friends
Eagle - strength, overcoming adversity
Eye - understanding
Fish - very good fortune
Fork - a change in directions
Heart - love
Ladder - advancement
Mouth - listen carefully
Rainbow - good luck to come
Ring - marriage
Sun - warmth and happiness
Vulture - theft

2 cups butter, room temperature*
2/3 cup powdered sugar
1 teaspoon grated lemon rind
1/2 teaspoon vanilla extract
2 cups all-purpose flour
1 1/2 cups cornstarch
Lemon Frosting
* Very important that you use room temperature butter (not softened
or melted).
Preheat oven to 350 degrees. In a large bowl, beat butter until
creamy. Add powdered sugar; cream until light and fluffy. Add lemon
rind and vanilla extract; beat well. Add flour and cornstarch into
butter mixture and beat well until well mixed.
Roll cookie dough into 1-inch balls. Place onto ungreased cookie
sheets and bake 15 minutes or until bottoms are light brown. Remove
from oven, carefully remove from baking sheet, and cool on wire
racks (when warm the cookies are delicate). When cool, spread Lemon
Frosting onto top of cookies.
Yields 6 dozen cookies.
This recipe makes enough for a double batch of cookies.
1/3 cup butter, room temperature
1 teaspoon grated lemon rind
1/3 cup fresh lemon juice
4 cups powdered sugar
In a medium bowl, combine butter, lemon rind, lemon juice, and powdered
sugar; stir until well mixed.
Watch for the next issue (coming Nov/03) for another great recipe!

Pregnant women should avoid
drinking caffeinated beverages like tea.
Pregnant women can take tea in moderation. Most physicians and researchers
agree that moderate amounts of tea daily will have no adverse effects
on the outcome of the pregnancy or the infant's health.
You should end meals with a cup
of tea for satiety value.
Tea contains tannin that prevents the absorption of important minerals
like calcium, iron and magnesium. Rather than ending meals with
a cup of tea, there should be a gap of at least an hour between
a meal and the intake of tea.
You should drink cold liquids
in hot weather.
There is a popular notion that cold liquid can cause abdominal cramps.
Drinking a hot cup of tea may actually relax and cool the body down.

A number of other studies have shown teas can reduce the risk of
developing cardiovascular disease. Researchers have found that the
dietary flavanoids in tea, also abundant in fruits and vegetables,
act as antioxidants in the body. They can help prevent the oxidization
of cholesterol, reducing its chances of being deposited in the arteries.
The way you prepare your tea may also affect its health benefits.
Some research suggests that adding milk makes flavanoids harder
to absorb.
US Researchers believe black tea consumption may lower bad cholesterol
levels and could one day be used to help reduce the chance of heart
disease for those at risk.
According to Tea Health Research, Oolong tea has long been believed
to be beneficial to health such as decreasing body fat

Whether it's childhood memories of granny's kitchen, mom's
healing hands or toasts to success, each month Tea 4 Free News -
Teazine features favourite tea stories. We would love to hear yours.
If we choose your story, we will send you a FREE carton of Darjeeling
tea bags.
This featured Tea Story is from Colleen Ott:
When I was in my teenage years, I worked for my
Great Aunt. She always had housework & yard work I did for her on
the weekends. Each day I was there, we always had lunch together.
She had a special teapot she placed green tea leaves in to make
hot tea. Along with the hot tea, Auntie Marie would serve hermit
(raisin) cookies. The big thrill of our "tea party" was when I finished
drinking my cup of tea. She would always pretend to be able to read
my tea leaves in the bottom of my cup & tell my fortune. I was young
& believed she could actually foresee what the future held for me.
If she said I was going to receive some unexpected money, I knew
her predictions had come true because at the end of the day she
always insisted on paying me for the work I did. If she said I was
going to go for a fun ride, I knew her predictions had come true
when Uncle Roger drove me back home at the end of the day. Every
weekend, I could hardly wait to see what Auntie Marie had to say.
My parents never drank hot tea so this was a special treat to me
in more ways than one. As long as I live, I will never forget those
anticipated adventures of the noontime predictions, in a young girl's
life. I think my Auntie Marie would be happy to know I now drink
Green Tea. However, I have never acquired the art she had for "reading
the leaves".
