  3. Universally Loved Beverage

Chai, the national beverage of India, has quickly become a universally loved beverage around the world. The drinking of chai, is not only soothing to the body and mind, but serves to contribute to dialog and socialization between friends and family.

To serve consumers growing desire for chai, instant chai beverages have been introduced into the market place. Why spend money on so-called sugary chai concoctions using low grade instant black teas when you can make it from scratch yourself? Making chai is easy and fulfilling. In a recent issue of our newsletter, we provided you with a universal chai recipe.

To make an excellent chai, we not only recommend that you use fresh spices and ingredients, but also suggest that you use a high quality tea base from the Assam region of India. Located in the far North-East of India, this is the world's largest single geographically distinct tea growing area and often referred to as the land of the one-horned rhino because of its bountiful state with rich, dense forests and wildlife. The tea trade in India is one of the largest contributors to its economy and is regulated by the Ministry of Commerce. To ensure proper implementation of government policies and regulations, in 1953, through an Act in Parliament, the Tea Board of India was established. In addition to facilitating the development of the tea industry in India, the Board also promotes tea research, collects and disseminates statistical data, and encourages labor welfare programs.

  6. Health to a Tea: Emerging Health News About Tea

TEA AND PROSTATE CANCER
Researchers at the MAYO Clinic in Rochester, Minnesota hypothesize that a substance in Green Tea, epigallocatechin gallate also known as EGCG is potent in inhibiting the growth of prostate cancer cells.

THE STRONGEST ANTIOXIDANT
Research at the University of Kansas in Lawrence, Kansas shows that EGCG is the "strongest of all" the antioxidants - more than 100 times as effective at soaking up free radicals than vitamin C, and 25 times more powerful than vitamin E.

Antioxidants are thought to help prevent the development of diseases, like cancer because they mop-up free radicals -- byproducts of the body's metabolic processes. Left alone, it is believed that free radicals damage cellular DNA, which may in turn trigger disease.

TEA AND FERTILITY
A study of 210 women who were trying to conceive, by Researchers in Oakland, California found that those who drank as little as half a cup of tea each day were twice as likely to become pregnant as women who did not drink tea.

TEA AND ULCERS
Research has shown that most ulcers are caused by the bacteria known as Helicobacter pylori. Today, ulcers are treated with common antibiotics because they eradicate this bacteria. Researchers in Japan found that catechins, a substances found in tea also appear to have antibacterial activity against Helicobacter pylori. It is also believed that since Helicobacter pylori is one of the causes of stomach cancer, then consuming tea every day reduces the risk of gastric cancer.

CHOCOLATE BLACK TEA CAKE

The perfect companion to an afternoon chai break, or maybe a Mother's Day or Father's Day treat.

Prep Time: 20 Minutes
Cook Time: 1 Hour
Ready in: 1 Hour 20 Minutes

Ingredients
4 eggs, separated
1 cup butter
1 2/3 cups white sugar
1 cup brewed gourmet black Assam or Darjeeling tea, cold
2 cups all-purpose flour
1 1/2 tablespoons baking powder
1/3 cup dry bread crumbs
1/3 cup unsweetened cocoa powder
1 cup chopped hazelnuts

Directions
1 Preheat the oven to 360 degrees F (180 degrees C). Grease and flour a 9 inch Bundt pan.
2 In a large bowl, cream together the egg yolks, butter and white sugar until light and fluffy. Gradually beat in the black tea. Toss together the flour, baking powder, bread crumbs, cocoa powder, and hazelnuts; fold into the tea mixture until just incorporated.
3 In a large clean glass or metal bowl, whip the egg whites until stiff peaks form. Fold the egg whites into the tea batter. Pour the batter into the prepared pan.
4 Bake for 60 to 70 minutes in the preheated oven, or until a toothpick inserted into the centre, comes out clean. Cool cake in the pan for at least 20 minutes before turning out onto a wire rack to cool completely.

MYTH #1: Tea contains more caffeine than coffee.
Tea contains one third the caffeine of coffee or cola.

MYTH #2: Tea is a diuretic.
If five or six cups of tea are drunk in one sitting, then yes there will be a diuretic effect because of the accumulated caffeine consumption. However, keep in mind that the caffeine content of one cup of coffee is equivalent to three cups of tea. Tea drinking throughout the day is recommended because it contributes to alertness and the constant hydration of one's body.

MYTH #3: Green tea contains no caffeine
Black and green teas are produced from the same plant, Camellia sinensis, so both naturally contain some caffeine, though much less than coffee.
