2. Tea Boosts Insulin Activity
Studies carried out at the USDA Beltsville Human Nutritional Research Centre in Maryland tested various tea extracts on fat cells taken from rats to see if they had a favorable effect on insulin. The fat cells were grown in a lab and fed tea extracts, insulin and radioactive sugar. The chemical epigallocatechin gallate (EGCG) most enhanced insulin. When green tea is oxidized into oolong and black tea, EGCG forms polyphenols, which are strong antioxidants. Black, green and oolong teas improved insulin activity the most. Adding milk diminished the teas positive effect on the insulin. The increase that occurs could shed some light on why tea is said to help avoid heart disease and high blood pressure. Medindia.net says the study found that insulin activity increased more than 15 times. Details of the study are featured in the book "The Sugar Solution" by Sari Harrar, Julia Vantine, and Prevention magazine editors.

3. Tea - A Natural Source of Fluoride
With all the talk these days about how changes in the type of water we drink could be affecting our fluoride intake, it's nice to find out that tea is an excellent natural source. It's been added to water and toothpaste for a very long time, but tea also another great way to reinforce tooth enamel. It can also help prevent cavities by reducing plaque build-up on your teeth. Tea plants are loaded with fluoride that is extracted from the soil by the roots. Black and green teas cut down on plaque as the fluoride seems to cut down on bacterial growth.

4. Tea Bits
-> Use chilled Chamomile tea bags to reduce puffy eyes!
-> The tea bag was invented purely by accident by American tea importer Thomas Sullivan in 1908. He used silk bags to send samples of his tea out to customers. His customers put the bags into the pot and brewed tea, thinking that was their intended use.

5. TEAmptation Recipe

Tea and honey vinaigrette
Tea lovers will appreciate the smoky undertones of this delicately sweet dressing. Toss it with mixed greens or spoon it over grilled chicken and spinach salad.

Ingredients:
1 tbsp (15 mL) darjeeling or orange pekoe tea
2 tsp (10 mL) liquid honey
2 tbsp (30 mL) sherry vinegar or red wine vinegar
1/4 tsp (1 mL) each salt and pepper
1/4 cup (60 mL) extra-virgin olive oil

Directions:
1. In small heatproof bowl, pour 1/4 cup (60 mL) boiling water over tea; cover and let steep until cool. Strain into bowl, discarding leaves.

2. Whisk in honey, vinegar, salt and pepper until honey is dissolved. Gradually whisk in oil. For thicker dressing, chill in refrigerator; whisk before using. Makes about 1/2 cup (125 mL) or enough for 8 cups salad greens or 4 servings.

6. Make Way for White Tea
Today Show Food Editor Phil Lempert has talked about what many of us already knew, white tea offers even more cancer-fighting antioxidant agents than green tea according to scientific studies. With white tea sales going through the roof, many manufacturers are jumping on the health-conscious food and beverage bandwagon, so it only makes sense to review the many benefits of white tea.

Phil Lempert points out that white tea is sometimes referred to as the "Rolls Royce" of the tea family. The leaves are harvested before they are fully opened, and the name white tea refers to fine white hair that covers the buds of the tea plant. White tea undergoes minimal processing, with a light, sweet flavor. It contains less caffeine than black (40 mg) or green (20 mg) tea at 15 mg per serving. It is recommended that it be served "as is", with no milk or sugar. The Today Show food critic compares the addition of milk and sweetener to adding Coca-Cola to a single-malt whisky. Its health benefits have been said to include cancer prevention, lower blood pressure, lower cholesterol, stronger bones, improved immune function, healthier teeth and gums, and healthier skin. Other possible benefits include reduced blood sugar, prevention of diabetes, stress reduction and revitalization.

8. Green Tea - a Summary
The articles are everywhere - Green tea has amazing properties that can prevent cancer, promote pregnancy, even clean your teeth. Whenever you hear about the origins of tea, your likely to hear about Camellia sinensis, the bush responsible for green, black and red teas. The dried leaves produce many of our favourite tea beverages.

Each colour of tea is produced using a different process. Green tea is created by steaming the leaves to prevent oxidation before being rolled and dried. Black and red teas originate when oxidation occurs as temperature and humidity are controlled during production before leaves are dried. Black tea is oxidized more than red. Green tea has been cited as good at keeping cholesterol at a reduced level, reducing blood pressure, acting as a blood thinner, reducing the risk of heart attack, decreasing risk of stroke, cancer, boosting longevity, enhancing immune functions, and aiding digestion.

With all the studies and possible health benefits that we hear about every day, how do we wade through the landslide of information and make a decision. The polyphenols in tea have been shown during research to produce antioxidants, which wipe out free radicals. These free radicals can eventually lead to cancer. A new green tea extract product being developed may help women's fertility. We've all heard that green tea helps you to lose weight (although the old saying about having too much of anything is something to keep in mind here), it has less caffeine than other types of tea and much less than coffee. The studies may change almost every day, but the point has been made in many people's opinions. Green tea is good for you, and scientific proof or not, there are almost endless health benefits worth personally investigating!
