2. Freshness of Tea: Buying and Storing Tea

Is it a cheap quality tea?
We ask this question first.  The bottom line is that you cannot expect a cheap, bagged product in a cardboard box to survive for very long.  Because they are of lower quality, the flavorings in cheaper teas will degrade more quickly.  If you find noticeable differences in the flavor of your tea, within a week or two of opening a new container, then the product may be the issue.  High quality product, with proper storage, should retain its flavors for at least 12-18 months.  The difference between low and higher quality tea is about 7-10 cents per cup.  If you are making your tea at home, the extra 10 cents may be worth it.

Has the tea been exposed to light ?
Excessive exposure to ultraviolet light can damage the flavor of your tea.  Though a clear jar looks great on your counter, sunlight could be degrading the quality of your tea.  Get an opaque, airtight storage container.  We like the ones with a rubber O-Ring for a seal.  Though they cost a little bit more, your tea will stay fresher, longer.  If you don't want to buy a special container, the next best thing is to put your tea in a dark cupboard or in a pantry.  This will keep it relatively safe.

Are you in a part of the country with high humidity levels?
Next to ultraviolet light, humidity is probably the next worst enemy of your tea.   Kitchen counters near the stove (cooking vapors etc) may not be the best for exposed tea.  Get an airtight storage container.  We like the ones with a rubber O-Ring for a seal.  Even with the extra cost, we feel they are worth it because your tea will stay fresher, longer.  For those of you in very humid climates, there is not much we can suggest.  In some markets, there are now heated containers which store your crackers and cookies and keep them from becoming soggy.   If you have one of these containers, might we suggest that you throw your tea into these as well?

Is the tea stored in an area with temperature fluctuations?
Temperature fluctuations may also degrade the taste of your tea.  If your tea is sitting on the top of a refrigerator, or near the oven, you might find a more rapid deterioration in the taste of the tea.  Aromatic flavors can be impacted by temperature fluctuations.  We suggest you keep your tea in an area with a relatively constant temperature.

Are you storing the tea next to open spices or other flavored products?
Over time, strong flavors may migrate and begin to dominate your tea.  The lighter teas are especially susceptible to strong, aromatic spices.  Get an airtight container, or just move the tea away from the offending product.  We recommend air tight containers to our customers.  Though they may cost more in the short term, they protect your tea and keep it fresh longer.

4. Part II: Medicinal Effects of Tea.Fact or Myth?

MYTH: Tea consumption helps decrease your chance of heart attacks

FACT: According to studies men and women who drank one or more cups of tea a day had a 44% reduction in heart attack risk compared to non tea drinkers. As well a Dutch investigation produced findings that drinking even more tea - between three and four cups a day - decreased risk of death from coronary heart disease by 58%. All types of tea contain flavanoids which are antioxidants. These flavanoids are believed to neutralize the effect of highly reactive molecules causing chemical reactions that can damage cells in the body including the cells in heart tissue.

MYTH: Pregnant women should avoid caffeine.

FACT: Just as with nearly everything else they do, pregnant women can take caffeine in moderation. Many women find they experience taste changes during pregnancy and cannot drink tea or coffee. For those who continue to enjoy their tea and coffee, most physicians and researchers agree that moderate amounts of coffee daily will have no adverse effects on the outcome of the pregnancy or the infant's health.

MYTH: All organic teas are claimed to be "organically produced" and "chemical-free"

FACT: There are no worldwide consistent standards for what constitutes an organic food product.  This means that anyone can label a product as being "organic".  Without standards, it becomes difficult to check the claims that are made regarding the method in which the product was grown.  Tea is a hand picked product, grown mostly in Developing Nations countries which don't have strict food regulations or a basic living standards let alone organic standards.   It is important to also note that a premium of 20-100% is not unusual for a product with an "organic" claim.  Until standards have been set it is difficult to say that every organic tea is indeed measurably organic.

MYTH: Drinking Green Tea Suppresses Aging

FACT: Oxygen is a gas that is both beneficial and potentially harmful to humans. While we need air to breathe, active oxygen in the body can oxidize lipids (fats) creating lipid peroxide. Lipid peroxide has been thought to trigger diseases such as cancer, cardiovascular disease and diabetes. The body is decreasingly able to purge lipid peroxide along with lipofuscin the "aging pigment" as it ages and so both accumulate over the years. One way to slow aging therefore may be to prevent the accumulation of these harmful entities. It has been shown that the higher the concentration of vitamins E and C in the bodies of animals, the longer they live. This suggests that active consumption of antioxidant foods and drink may restrain the aging process.

Green tea is rich in antioxidants, and although more research is needed to better establish the relationship of aging and antioxidants, there is a belief green tea may help control the aging process.

(You might protect yourself with a cup of tea.  In one study, a scientist at Tokyo Medical University in Japan monitored ten people who had just eaten a fatty meal. Five had drunk black tea with dinner; the others, plain water. The tea drinkers scored higher in blood flow and antioxidant capacity than the water drinkers did.)

MYTH: Having a cup of tea after a heavy meal can protect you against a heart attack.

FACT: Drinking tea after a heavy meal has also been found to increase the blood flow through the body. A heavy meal produces a chemical reaction which restricts the blood vessels from dilating or widening in response to the increase in blood flow. A study conducted by the cardiologists at the University of Maryland Medical Center found that drinking black or green tea may help decrease the constriction of blood vessels after a high-fat meal due to its antioxidant properties.

5. TEAmptation Recipe!


Tea Loaf
•  2 cups + 2 tbsp hot brewed earl grey tea
• 1 cup raisins
•  2 1/2 cups flour
•  1 cup sugar
•  2 tsp baking powder
•  1 tsp salt
•  1 tsp cinnamon
•  1/4 tsp cloves
•  1/4 tsp black pepper
•  1/2 cup butter
•  6 tbsp icing sugar, sifted

Directions:
Preheat the oven to 350º F. Pour 2 cups hot Earl Grey tea over raisins and set aside to soak. In medium bowl, sift together flour, sugar, baking powder, salt, and spices. Cut in butter until blended thoroughly. Add tea with raisins and stir until smooth. Pour into loaf pan and bake for 50-60 minutes, when a tester inserted in the center of the loaf comes out clean. Allow to cool for 10 minutes, and then remove loaf from pan. Stir together remaining tea with icing sugar and brush over loaf.

~Serve warm with sweet butter. Loaf will keep for 3 days wrapped well and at room temp~

6. Health News: Tea and weight management

A study from Obesity Research indicates that people who have been regular tea drinkers for more than 10 years showed lower body fat percentages compared with those who don't drink tea regularly . Tea is naturally calorie-free (without the addition of milk or sugar) and is counted towards your daily water intake. Some teas, including green tea and certain herbal teas, can help you to lose weight and keep the weight off. Whether you're counting carbs, calories or miles on the treadmill, you can reward yourself with a cup of tea-hot or iced, it's a delicious and totally guilt-free indulgence!

When I was 16, I went on a one year student exchange through our local Rotary club. I landed in Brisbane Australia which is a far cry from my then home of northern Alberta . The climate and culture change were amazing. My host Rotary club was made up of a fairly elite and prosperous group. As a result, I would be spending a fair bit of time at elegant functions and dinners. To ward off social faux pas, my first host mother took me to a formal dining room to teach me the ways of fine dining and gracious teas. The training paid off, as I was able to attend no less than 20 teas while on exchange, enjoying many brews and of course, strawberries and scones. The appreciation of tea was alive and well in Brisbane , and thanks to that experience, I continue to enjoy tea today - over 10 years later. - Jo-anna L.
