There is no exact right or wrong in brewing a beverage from tea leaves, but the desire is to create a perfect pot with the right combination of all that is involved: technique, ingredients, and ambiance. A professional tea taster can recognize the tea garden, sufficient conditions of a tea plucking day and can even offer suggestions to improve the manufacturing and harvesting process. It has been said that a tea-taster must always use their senses. These include the senses of smell, sight, touch and of course, taste to judge the quality of the tea!
A tea taster must be up to speed with what consumers demand and prefer as well as new manufacturing techniques while evaluating the tea. Some say that tea tasters are born with these talents, however, they would have to be trained and develop the senses through many years of practice before the palate is trained to distinguish tastes. It gets more difficult to analyze teas with similar qualities and very mild differences, for example, Darjeeling .
The process usually begins with freshly drawn water brought to a boil poured over a small amount of tea leaves and infused for 4 to 6 minutes. Once it is ready for tasting, it is poured into miniature tasting white coloured ceramic cups, to distinguish color.
Tasters will examine both dry and wet leaves, judging the brew's colour and clarity. They will sip the tea cups by sucking the tea back against their palates and not swallow, but spit it back out. This way they can use their taste buds to determine quality differences between high grade and low grade teas. They look for flavour, strength, and briskness when judging the teas.

The purpose of a tea cozy is to keep the freshly brewed tea hot for long. Of course a tea cozy should never be placed over a tea pot that still has leaves or bags in it. That would cause the tea to stew.
Types that are popular include beaded, embroidered, and knitted (looking like winter hats). They are usually lined with lambs wool, goose down, cotton batting, newspaper layers covered with felt, and synthetic materials.
On my last trip to Vietnam , I was able to pick up an interesting decorative art container of a tea cozy as a gift to my tea connoisseur father. I actually bought it from one of the tea shops at a market in Hanoi , VN. It is a beautifully decorated lacquered wood container with a teapot inside. I thought it was a lovely gift. It was so lovely that I picked up another one during my next trip, but had it in my luggage and when I opened my suitcase; the container was cracked into half! Luckily, the teapot was not damaged, and we tried to glue it together to preserve it. Here are couple of images of the tea cozy that I would like to share with you.

- 8 ounces cream cheese, softened
- ¼ pound fresh or frozen crab meat, thoroughly drained
- ½ cup pitted black olives, drained and chopped
- 40 slices cocktail Rye bread or French baguette
- 1 medium cucumber, peeled and cut into 20 thin slices
- 1 bunch of fresh watercress sprigs (about 4 oz.)
- 1 tablespoon coarsely shredded lemon peel
Directions: In a large bowl, beat cream cheese until smooth. Stir in crab meat and olives until well combined. Spread 1 teaspoon of crab mixture onto each bread slice. Top with 1 cucumber slice and 1 watercress sprig. Sprinkle lemon peel on top of watercress. Top with remaining bread slices to form sandwiches. Trim crusts. Yield: 20 small sandwiches.
