An article by Donna Deane from the Los
Angeles Times, in the Sept 22, 2004 issue comments on a new and
unique idea for an alternate way of serving tea. Since we already
enjoy the popular beverage called Iced Tea, why not put it through
an icecream maker and make a sorbetor call it tea
ice?
The best way to make this new treat is to brew your favourite
quality loose leaf tea and sweeten it with sugar or honey and maybe
a bit of fresh lemon juice to taste. They suggest that you can spin
it through an icecream maker or freeze it, then slush it up after.
Tea ices may be served immediately or made ahead of time and kept
in the freezer. If you do this, remove the ice from the freezer
about 30 minutes before serving. Have it sit at room temperature
until it melts and softens enough to fluff with a fork, or use a
blender or food processor to quickly break it up into smaller crystals.
The tea flavour is actually supposed to hold, unlike other flavours
that get lost when frozen.
Good flavours to go with are Earl Grey tea, Black Currant Tea, Mint
Tea, Lemon Tea, or any other aromatic tea you feel like treating
yourself to.
Garnish your treat with crushed up tea leaves, mint leaves, dried
edible flowers, cinnamon, or other fruits and spices that will give
you that additional touch! Mmmm, enjoy!

A Refreshing Frozen Dessert - this recipe

Ingredients:
6 cups water
1 cup honey
2 tsp grated orange peel
6 tea bags
¼ cup lemon juice
Preparation:
In a large saucepan, combine water, honey and orange peel.
Stir over medium heat until it boils.
Remove from heat and add tea bags. Let steep 5 minutes.
Remove tea bags and bring to room temperature. Add lemon juice.
Pour into automatic ice cream maker canister and freeze according
to manufacturer's instructions.
YIELD: 2 quarts

According to studies published by the Tea Council of Canada, new research
indicates that tea may have a protective effect against heart disease
and cancer caused by smoking. If you drink 30-32oz of tea per day,
you can reduce up to 10% or more of bad cholesterol and reduce DNA
damaged caused by smoking.
BBC News reports that experts believe that antioxidants in tea help
to repair cells in the body which have been damaged by sunlight,

of Belize City, Belize:
I started drinking tea
when I was a little girl living with my grandma. She used to make
it from black tea leaves in this iron pot with cinnamon sticks
and then sweeten it with lots of milk and sugar, insisting that
you should have something hot in your stomach first thing in the
morning.
I am now 23 years old and still a tea drinker,
although I now sample a wide variety from Oolong to mint. I sometimes
drink 2-4 cups a day, especially when I need to unwind after a
long day. To this day when I smell cinnamon, I remember the time
I used to spend at her house, and whenever I am feeling nostalgic
and missing her, I would brew up a cup. Everyone in my family
calls the concoction "Mama Tea" and my little sister,
7, who loves it very much, will no doubt continue on the tea drinking
tradition and pass it on to her children.
