According to the National Cancer
Institute, tea polyphenols are compounds in tea leaves that are natural
plant antioxidants. Antioxidants have been shown to prevent damage
caused by free radicals to DNA and other molecules.
Different types of teas contain different types of polyphenols. The
different types of teas are classed based on the way they are processed.
The processing methods of White, Green, Oolong and Black tea each
have different varieties of tea polyphenols. When tea leaves are intentionally
broken or rolled during processing, catechins become present. The
oxidation of catechins, known as fermentation in the tea industry,
causes them to polymerize and to form larger, more other polyphenols
known as theaflavins and thearubigins. White and Green teas tend to
have higher catechin concentrations while theaflavins and thearubigins
have more theaflavins and thearubigins.
Tea polyphenols have many cancer preventing properties. They contain
high antioxidant activity, allowing them to reduce abnormal cell growth
and inflammation, decrease cancer-causing agents, and aids cells to
functional normally in the body.

White teas are the least processed of all
tea types, meaning that they do not undergo any fermenting and withering
before they are fired. Its leaves and buds are simply steamed and
dried. White tea contains higher proportions of buds which are characterized
as fine silvery hairs giving it a whitish appearance,
and brewing a pale yellow liquor. Its flavour is much smoother, milder,
and slightly sweeter than green teas. White teas are the closest to
the fresh taste of pure tea leaves.
White teas come from the camellia sinensis tea plant, but the leaves
are picked before they fully open and the buds are covered with silver-like
hairs. This type of harvest not only has to be done at a certain time
of the day, but only during certain seasons, therefore, its rarity
commands a higher price.
White tea has the least amount of caffeine in its tea class because
of the way it is processed giving it higher levels of polyphenols,
a major cancer-fighting potential. Its caffeine content generally
ranges in the cup from 5-15 milligrams.
White teas are best brewed when water reaches just before boiling
point. Since they are light, you should allow the leaves to steep
for about 6 minutes or more. If you are re-steeping the tea leaves,
be sure to give it an extra minute or two to allow the buds to open
up and its full flavour to be released.
White teas are perfect to enjoy in the evening after a light dinner.
Avoid drinking them after eating spiced foods, as much of the delicacy
of their taste will be lost. They are also an alternative for people
who want to drink Green tea for their health benefits, but find the
taste of some Greens too strong for their palates.

Black, Strong, No Cream or Sugar
You need your tea to reach the parts that other people's tea just
doesn't reach; it helps you to see the finer details that others often
miss. Sometimes you feel as if you're swimming against the tide. Occasionally
that's because you are. Kick back and try going with the flow; you
never know what you might see from this different perspective. Think
about making somebody else a cuppa during your tea break.
Black, Strong, with milk and sugar
If something needs to be done or said that takes guts, you are the
person whom others will seek out to take on the terrible task. You
have courage of your convictions and expect the same from others.
Unfortunately, this can also make some people think that you are domineering
or too assertive. What they don't know is that you still suck your
thumb, have a comfort blanket and don't like thunderstorms. Practice

Assam
You're everybody's friend, you can rub along happily with just about
anyone. Good fun to be with, you never have a harsh word to say, even
for those who deliberately try your patience. The flip side of this
is that it can be a bit of a struggle to be taken seriously. Don't
let this discourage you. Your tenacious spirit and fearlessness of
failure will see you through in the end. Keep the mood in the canteen
up, you'd be sorely missed (you) if you weren't there to raise spirits.
Darjeeling
It's no surprise that you drink the "Champagne of Teas";
you want the finest things in life, and you want as much of them as
possible. Your ability to conspicuously consume can, and frequently
does, unnerve your friends. Most times however they'll suffer your
excesses because your lust for life is so infectious. Top the kettle
up with the finest Evian and enjoy another cup.
Earl Grey
You are a person who, like the flavour of Earl Grey, is delicate.
Your ego is quite easily bruised. Conversely, you thrive on positive
criticism, but unfortunately you feel that you are only as good as
your last success or failure. Your state of mind can be a bit of a
roller coaster, with frequent ups and downs. Have more faith in yourself:
you're stronger and more robust than you think and you'll find you
get many more ups than downs that way. Tea breaks for you are rare
and precious - try to take a few more, making them a reward for your
efforts.
Oolong
Frequently misunderstood, you give the impression of being incredibly
self-confident and self-assured. Your steely gaze and purposeful manner
can easily intimidate others - not that you mean it to, well not most
of the time anyway. You're scared that if they knew that this self-confidence
was self-consciousness, you'd really be in trouble. March into the
kitchen with your chin up and shoulders back.
Green tea
You are a person who demands balance in all parts of their life. Not
prone to strong emotional outbursts, you are at one with yourself
and others see you as a reliable and honest friend or colleague. You
are likely to be very choosy about what you drink your tea from -
no chipped or stained mugs for you. Consider taking life less seriously
and learn how to play the teaspoons in your tea break!

Yield: About 50 small 3/4 truffles
Ingredients:
- 7 ounces white chocolate, roughly chopped
- 1/2 cup heavy cream
- 1 1/2 tablespoons loose leaf jasmine tea
Coat bottom and sides of a 4x8 baking pan lightly with cooking spray.
In a small sauce pan boil the tea leaves and heavy cream. Strain to
remove the tea leaves. Place the chopped white chocolate in a large
bowl, and pour the boiling cream over the chocolate. Stir slowly until
smooth. Pour the mixture into the pan. Refrigerate for at least 2
hours or overnight.
Slice into 3/4 squares. Coat the squares in cocoa powder or
in tempered white chocolate before serving.

halt the growth of new oral cancer cells, and breaks down and kills
existing oral cancer cells, according to a new study in General Dentistry,
the clinical, peer-reviewed journal of the Academy of General Dentistry.

There is never a better
cup of tea than that which is shared with a kindred spirit. My friend
Wanda and I have been bosom friends since childhood. Unfortunately
for us, we live some 4000 miles away from each other. My husband
and I are expatriate Canadian Maritimers living in Vancouver, British
Columbia, while Wanda and her husband have stayed in our childhood
home of Halifax, Nova Scotia.
Both Wanda and I are avid tea enthusiasts who enjoy hosting various
teas in our respective homes throughout the year. The few times
when we are able to get together we are sure to make one or more
"cups of splosh" accompanied by dainty tea sandwiches and a variety
of warm-from-the-oven scones served with preserves and clotted cream.
These ever-so-rare teas-for-two are always a feast for our souls
as well as our bodies. Sipping our brew-of-choice, we chatter back
and forth about our hopes and dreams, share tea recipes, pour over
pictures of our tea tables, and reminisce about our shared childhood.
